Good to mild acidity, medium to full body, milk chocolate, some richness, sweet, varying hints of fruit, floral, nuts, and spice, clean, soft sweet finish

Roasting Aroma: Light wine, pound cake, faint sugar cane

Dry Aroma: Milk chocolate, fruit

Brewed Aroma: Almond, spice, milk chocolate, caramel, hint of fruit

Varietals: Red Catuai Maui, originally a cross between Caturra and Mundo Novo developed in Brazil. Often called the "Cabernet of coffees" Red Catuai can be fairly bright at lighter roast levels with fuller body and milder acidity at darker roast levels, for me it provides good sweetness across the roast spectrum.

Processing: Fully Washed

Grown on 500 acres of what had been part of a Sugar Plantation for over 100 years that now produces only 4 Varietals of Arabica coffee. Utmost care and attention to details is taken in producing this Fully Washed process coffee.

Nice sized beans, easy to roast, from light to medium dark (New England to Full City is good) so you can taste the bean, we prefer no more than solid City roast on all high end beans for this reason.
